Bolivia is not exactly the first country you think of when you hear about the dish (raw fish marinated in lime juice), but the pejerrey is a Lake Titicaca fish whose white flesh works perfectly with ceviche, and add-your-own spicy locoto peppers and toasted corn kernels gave a great spark and crunch to the lime broth.
