My favorite part of it is that I can throw in whatever I have sitting around in the fridge–leftover calamatas from greek salad, whatever fresh herbs are laying about, red onion that needs to be used, etc.
And it can be made more elaborate with the addition of a handful of chopped black olives, either oil-cured or a good variety like calamatas.
Purple pestos and juicy tapenades, plump peppery green giants, tangy calamatas with garlic and citrus … I don't know about you, but olives seriously turn me on.
