If they really wanted Goode they definitely could use him but it would mean that they would have to do two camera passes for every shot of him with the dwarves, (which is what they had to do for the fellowship anyway), and 3 when Gandalf/other tall characters are with them (Beorn is supposed to dwarf even Gandalf so that would require 4).
