Closer to home: Rather than signing up for a costly tour of California wine country, you can make your own hotel reservation, rent a car and sign up a la carte for wine classes at a Napa Valley nonprofit called Copia: The American Center for Wine, Food & the Arts. Started by winemaker Robert Mondavi and opened in 2001, the center offers a wide range of courses -- from wine-tasting classes for beginners to a weekend immersion school with well-known sommeliers.
