However, if you only have Dutch-process and really, I think the quality is far superior, there is an exchange for baking powder/baking soda that escapes me right now, but should be Google-able.

I also want to let everyone know that I made these with regular natural cocoa, not Dutch-process, with no other changes, and they turned out just fine.
