MEPIS falls somewhere in between, and Kubuntu is simply Ubuntu with the KDE desktop.

AFAIK, that is true for Minti and Ubuntu main distributions, but for Ubuntu there is a variant available called Kubuntu where KDE is the default, and also there is soon to be a variant (it is in beta now) of Mint where KDE is the default.

It all works (amazingly), but I'm not sure if I like the whole "Kubuntu" yet.

If you get "error: X11/Xlib. h: No such file or directory", install the devel package of xorg (the actual name may vary between operating systems, for example it is xorg-dev on Ubuntu based systems such as Kubuntu).
