    The American Spice Trade Association (ASTA) Pungency unit is based on a scientific method of measuring chili pepper "heat." It uses high performance liquid chromatography (HPLC) to identify and measure the concentrations of compounds that produce a heat sensation. Scoville heat units are roughly 15 times higher than ASTA Pungency units when measuring capsaicin.
