  • After some Web research and reading the few Peruvian cookbooks that I own, I have come to the conclusion that this is a different sauce altogether-- derivitives of a sauce used on a dish called Ocopa a la Arequepina, a potato dish with a creamy pepper sauce made with evaporated milk (or cream) and cheese (queso fresco), huacatay, and often peanuts or walnuts.
