Moreover I started with my rye sourdough (100% hydratation), but in many other occasions my friends and I used a plain white wheat or durum wheat sourdough without the slightest problem.
Test repeated with 2. 5% of salt/flour with 75% hydratation: once again perfectly succeeded with no deterioration.
