Jeni, i use this ceramic-coated knife i got from this store in k-town called Kim's Home Center off Olympic Blvd. it's awesome and damn sharp. they have the vegetable and santoku style knives for the same price. the vegetable is more rectangular w/ a larger surface area than your conventional chef knife. the santoku is the popular knife you see on food network all the time - smaller and lighter than the chef knife.
