It seems to be a variation on pescatarian and pescitarian and pescetarian, and is used to refer to a person who eats fruits, vegetables and fish. There is a blog: http://peskytarian.com/
It is also in the urban dictionary - in fact, googling the term turns up quite a few hits.

Oops - sorry, it's not in urban dictionary - that would be "peskitarian" with an "i", not a "y"
