A white, pressed, uncooked cows' milk cheese from the Auvergne region of France, produced since the 17th century. This cheese was the first rustic French "farmer" cheese to be awarded the AOC - Appellation d’Origine Contrôlée (1979). Aged on rye straw, this cheese tastes somewhat like Reblochon.
