I have to confirm that here in Spain, the dulce de membrillo is eaten very often with cheese, not only the one you mention, but all the northern kind of cheeses, such as "queso de tetilla", "queso San Simón", etc.
(I, myself, am partial to cabrales and tetilla, rather than brie.
