Illustration by Jason Lee for The Wall Street Journal More discerning tequila drinkers know it comes from the agave plant and can recognize the difference between the major types: the unaged blancos; reposados, which are aged in oak between two months and a year; and añejos, which spend between one and three years in barrels.
I have a couple of reposados and an anejo in the fridge, and am about to break them out for some sipping.
Blancos are unaged tequilas; reposados are aged in oak barrels between two months and one year; and añejos are aged in oak one to three years.
Silvers tend to be spicier, while reposados and anejos start to be more mellow and take on flavors from the wood they are aged in.
More than 100 tequilas are on hand: blancos, reposados, anejos and muy anejos.
