  • Irish ewes' milk cheese. A modern, farmhouse, unpasteurized, organic, vegetarian, semi-hard cheese made from sheep's milk. It is semi-soft when young but resembles Manchego in texture when mature after about 6 months, although less oily. Mature cheeses are sharp and salty and retaining the burnt-sugar flavor that characterize some sheep's milk cheeses.
