I used to have a recipe for a tahini sauce/dressing that was pretty great. It was just tahini with a little bit of water, lemon juice, and garlic.

Yeah, it's the sort of recipe that doesn't really require a recipe.
Adding the water changes the color of the tahini--it's like magic.

I noticed that with hommus. You add kind of grey tahini to dark yellow chick peas and suddenly the whole thing lightens in hue.
