  • This kaiser-type roll, topped with caraway seeds and coarse salt, is used to make what is called "beef on weck" or "beef on wick," which is a sandwich filled with roast beef served with ground, prepared horseradish and sometimes au jus. This became popular in the Greater Buffalo Metropolitan area in Western New York, once predominantly inhabited by immigrants from Germany. Perhaps someone more qualified can research this, but in the Oxford Superlex triple bilingual dictionary, I found Kümmel = caraway seed, and Wecken = oblong roll.
