I go through a couple of heads of liflower per week and I drive my kids nuts by using the word fauxtatoes too much and every chance I get.
On a lighter, unrelated note, from Jimmy Moore I've gotten a recipe for cauliflower fauxtatoes I can't stop making.
But substitute fauxtatoes for the potatoes by substituting Creamy Cauliflower Puree that I’ve posted about in another blog for the mash and you’re good to go.
Mashing cauliflower with cream and butter is fine, but you should eat it because you like cauliflower, cream, and butter, not because you’re trying to “make do” with sigh “fauxtatoes” when you really wish you could have mashed potatoes.
