The cream from milk differs in composition from the cream obtained from whey, and the composition can be measured with a butyrometer or simply by eye.
Put the top tightly on the butyrometer and agitate until the solution is well mixed.
Add 11 ml of milk, taking care that it runs down the side of the butyrometer so as not to mix too quickly with the acid and burn the milk solids.
Place the butyrometer in the centrifuge and leave it in motion for approximately five minutes.
